Ingredients

  • 1/4 cup butter, melted
  • 2 cups sugar
  • 5 medium eggs
  • 1 tablespoon yellow cornmeal
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup buttermilk
  • 1 pie crust, 9 inch

Instructions

  1. Preheat oven to 350 degrees
  2. In a large bowl, whisk together melted butter, sugar, eggs, cornmeal, flour, vanilla extract, lemon juice, lemon zest, and buttermilk. Pour into crust and place on baking sheet.
  3. Bake for 50 to 55 minutes, or until set.
