Homemade Vanilla Extract

Vanilla beans and alcohol are all you need to make a never ending jar of homemade vanilla extract.

Vodka is recommended for the purest vanilla flavor, but this can be made with any 80 proof alcohol. It's easy to make, so it's fun to experiment with other blends. Try using bourbon, brandy or rum for an extra rich extract.

Split the beans lengthwise and place in a sterile, glass jar with a lid.

Fill with 1 cup alcohol.

Screw the lid on the jar, give it a good shake and place in a cool, dark spot.

Give the bottle a shake every 5 days or so and in 8 weeks it will be ready to use.

When the jar is about 3/4 full you can top it off with more alcohol to restore your supply.

Keep adding beans as you see fit, just remove the older pods to free up space.

Box up a glass bottle, vanilla beans and a small bottle of alcohol as a gift for your favorite gourmand.

Time to prepare: 30 minutes.

This recipe is vegetarian.
