Regina Charboneau, chef at Monmouth Plantation in Natchez, spices up traditional sweet potatoes with bourbon, brown sugar and cinnamon.

Ingredients

  • 4 cups sliced cooked sweet potatoes
  • 1/4 pound butter
  • 1 cup brown sugar
  • 1/4 cup bourbon
  • 1/4 teaspoon cinnamon

Instructions

  1. In medium heavy sauce pan combine butter, brown sugar, bourbon, and cinnamon. Cook until the brown sugar dissolves.
  2. Place cooked sliced sweet potatoes in buttered baking dish.
  3. Pour syrup over the potatoes and bake for 20 minutes in a preheated 350 degree F oven.
