Roasted Baby Carrots with Dill


    • 1 pound baby carrots, peeled
    • 2 tablespoons olive oil
    • 1 tablespoon fresh dill, chopped
    • 1 tablespoon lemon juice
    • salt and pepper, to taste


    1. Toss carrots with olive oil, salt and pepper.
    2. Spread out on a cookie sheet.
    3. Cook in a pre-heated 400F oven for 20 minutes.
    4. Transfer to a serving bowl. Toss with dill and lemon juice.
