If you are harvesting carrots from your garden, here’s a great recipe using ginger, honey and toasted cumin seeds to accentuate their sweet flavor.

Ingredients
- 1/2 stick of butter
- 1/2 teaspoon cumin seed
- 2 tablespoons honey
- 1 fresh ginger root
- 1 pound carrots (about 8 medium size carrots)
Instructions
- Begin by cutting the carrots into 3 inch pieces that are about 1/2 inch wide. Then take the fresh ginger root and cut off a 2 inch piece, peel and thinly slice this piece. Next toast 1/2 teaspoon of cumin seed by stirring them around in a hot skillet for about 1 minute then remove them from the skillet and set aside.
- Over medium heat melt 1/2 a stick of butter or a substitute and add the carrots and ginger to saute for 3 to 4 minutes. Once this is done add the 2 tablespoons of honey and continue to saute for another 4 minutes until the carrots are tender but firm.
- Now all that is left to finish this dish is to sprinkle the toasted cumin seed over the top. Serve warm.
