• 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • 6 plum tomatoes, peeled and minced
  • 6-ounce can tomato paste
  • 2 tablespoons parmesan cheese, grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1 small bay leaves
  • 1 teaspoon fennel seed


  1. Saute onion and garlic in olive oil until tender.
  2. Add the remaining ingredients and bring to a simmer. Simmer on low for 30 minutes to an hour.
  3. Brush your pizza crust with olive oil and sprinkle with fresh herbs. Remove bay leaf and spread sauce over herbs. Add meat or cheese if you wish and bake. Alternatively, wait to add the fresh herbs until after the pizza is done. This will help keep their flavors bright.
