Ingredients
- 1/4 cup butter, melted
- 2 cups sugar
- 5 medium eggs
- 1 tablespoon yellow cornmeal
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/4 cup buttermilk
- 1 pie crust, 9 inch
Instructions
- Preheat oven to 350 degrees
- In a large bowl, whisk together melted butter, sugar, eggs, cornmeal, flour, vanilla extract, lemon juice, lemon zest, and buttermilk. Pour into crust and place on baking sheet.
- Bake for 50 to 55 minutes, or until set.
