Amie’s Spinach Guacamole

Culinary nutritionist, personal chef and food writer, Amie Valpone, shares this recipe for guacamole that’s packed with power foods.

    Ingredients

    • 3 ripe avocados, peeled, pitted, cut into chunks
    • 1/4 cup red onion
    • 1/4 cup fresh cilantro
    • 1/4 cup spinach, chopped
    • 1 pint grape tomatoes, halved
    • 1 juice of lemon and zest of lemon
    • 1/2 cup hummus
    • 1/4 cup flax seed oil
    • 1 teaspoon flax seeds
    • 1/2 teaspoon chili powder
    • 3 scallions, chopped
    • 1/2 salt
    • 1/2 pepper

    Instructions

    1. Combine all the ingredients and gently stir. You can also use a potato masher to create a creamy guacamole. If you do, wait to add the tomatoes until after you have mashed the avocado.
