1/4 cup granulated sugar, omit if you prefer a savory fritter
1 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon ground pepper
2 large eggs beaten
3/4 cup heavy whipping cream
Vegetable or canola oil for frying
Green onions and sour cream for garnish
In a large mixing bowl, stir together the corn, flour, sugar, baking powder, salt, pepper, and cayenne.
Add the eggs and heavy whipping cream and stir until well incorporated.
Fill the bottom of a large skillet with oil and heat over medium-high heat.
With a large spoon or an ice cream scoop, drop 4-5 scoops of corn fritter batter into the hot oil and fry for 2-3 minutes. Flip each fritter over and fry for an additional 2-3 minutes or until golden brown.
Drain the fritters on a plate or pan lined with paper towels.
Serve warm with sour cream and chopped scallions!
Collard Greens
Ingredients
1/2poundbacon, chopped
1/2large onion, chopped
5leaves of collard greens – rinsed, trimmed and chopped
1small head of cabbage, chopped
salt and ground black pepper to taste
1pinch of white sugar
1teaspoongreens seasoning, divided
Instructions
Fry the bacon with the onion in a large skillet over medium heat until the bacon is crisp, about 10 minutes. Stir in the chopped collard greens, sprinkle with salt, black pepper, and 1/2 teaspoon of the greens seasoning; cook and stir for 5 minutes.
Add in the darker chopped cabbage leaves, and cook and stir until almost tender, about 5 minutes. Stir in the remaining cabbage; season with salt, black pepper, sugar, and the remaining greens seasoning. Stir well; cover and cook until tender, stirring occasionally so that the greens do not scorch, about 10 minutes.
