Regina Charboneau, chef at Monmouth Plantation in Natchez, spices up traditional sweet potatoes with bourbon, brown sugar and cinnamon.

- 4 cups sliced cooked sweet potatoes
- 1/4 pound butter
- 1 cup brown sugar
- 1/4 cup bourbon
- 1/4 teaspoon cinnamon
- In medium heavy sauce pan combine butter, brown sugar, bourbon, and cinnamon. Cook until the brown sugar dissolves.
- Place cooked sliced sweet potatoes in buttered baking dish.
- Pour syrup over the potatoes and bake for 20 minutes in a preheated 350 degree F oven.
