Toasted Coconut Pie

    Ingredients

    • Pastry shell
    • 3 eggs, beaten
    • 1 ½ cups sugar
    • ½ cup butter, melted
    • 4 teaspoons lemon juice
    • 1 teaspoon vanilla
    • 1 1/3 cups flaked coconut

    Instructions

    1. Place pastry shell in a 9 inch pie plate and flute edge as desired. Combine remaining ingredients and pour into pastry shell. Bake for 40-45 min at 350. Allow to cool before slicing.
