- 1 pound fresh snow peas, strings removed
- 2 tablespoons minced shallots
- 1/4 cup butter
- 1/4 cup chicken bouillon
- Salt and freshly ground pepper to taste
- 2 tablespoons chopped fresh mint
- Steam snow peas 2-3 minutes or until tender-crisp.
- Saute shallots in butter.
- Add bouillon and cook until soft.
- Add snow peas and heat through over medium-high heat for about 1 minute, tossing well.
- Season with salt and pepper.
- Sprinkle with mint and serve.
