- 1 pound baby carrots, peeled
- 2 tablespoons olive oil
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- salt and pepper, to taste
- Toss carrots with olive oil, salt and pepper.
- Spread out on a cookie sheet.
- Cook in a pre-heated 400F oven for 20 minutes.
- Transfer to a serving bowl. Toss with dill and lemon juice.
