- 1 round of herb focaccia bread
- sun dried tomato mayonnaise made from combining 3 tbs. sun dried tomatoes with 1/2 cup mayonnaise in a blender
- 2 cups shredded rotisserie chicken
- 1/2 cup roasted peppers
- 1 1/2 cups mixed greens with radicchio
- 1 cup clover honey
- Slice through the focaccia bread lengthwise to make two halves.
- Spread one side of the bread with the sun dried tomato mayonnaise.
- Top with shredded chicken, roasted red peppers and mixed Greens.
- Place the top of bread back on and cut into quarters.
