One of my favorite summertime treats is a tomato sandwich. It couldn't be easier to prepare and can be modified to suit both your hunger and what you have in the pantry. The secret is in the tomato. Always use meaty, homegrown tomatoes that are full of flavor. Slicing tomatoes such as Brandywine or Beefsteak make for some of the best tasting sandwiches.
Peel the tomato and cut it into thick slices. Place the slices on a plate and sprinkle with salt and pepper. Set aside for a few minutes to allow the juices to draw.
Toast the bread. Freshly baked, crusty bread is, of course, going to taste best but I've found that if the tomato is good, any toasted bread will do because this sandwich is really about the tomato.
Spread a layer of mayonnaise over one of the pieces of bread. Add the tomatoes, lettuce and basil. Top with the remaining piece of toasted bread and you're ready to eat!
