Tomato Artichoke Pie


Bake piecrust according to directions on package.

Mix together mayonnaise, grated Parmesan, and artichoke hearts.

Place peeled and sliced tomatoes on baked pie curst.

Layer basil leaves on top of tomatoes and sprinkle with salt and pepper to taste.

Spread mayonnaise mixture on top of tomatoes.Bake at 350 degrees F for 15 to 17 minutes. Serve warm.


You can use Romano cheese in place of Parmesan, if you prefer.

Time to prepare: 30 minutes.

    This recipe is one of my husband's favorites. I don't make it often, but save it as a surprise for him. What a treat it was to discover that our new home has tomatos ripening in the garden.
