Smith Family Vegetable Soup

This is a great recipe for using up end of the season tomatoes. It's ideal for canning.

There are no set ingredients. The quantity of the vegetables depends on how much soup you would like to prepare.

Instructions


Put tomatoes in a pot and squeeze juice into the pot. Bring to a boil. Add lima Beans, carrots, sweet pepper, corn, potatoes, green beans, peas, and onion.

Cook until it boils. Cook just a little longer while boiling, but you don't have to cook all the way through.

Jars and lids should be washed and sitting in hot pan of water ready to be filled.

Put the soup in the clean jars. Seal with lids and place in a pressure cooker for 40 minutes. The jars will seal themselves when transferred outside of the cooker.
