Scallion And Smoked Cheddar Biscuits
For a recent Sunday brunch I took my friend Regina Charboneau's buttermilk biscuit recipe and added a twist with fresh scallions and smoked cheddar cheese. The combination of flavors was a big hit with my guests.
Heat 1 tablespoon of melted butter in a skillet and sautee the green onions until soft. This will just take a minute or two.
In metal mixing bowl add flour, baking powder, pepper and sugar. Blend with wire whisk. Cut margarine and butter into small cubes about 1/2 inch thick.
Using a pastry cutter or a fork combine butter and margarine with dry ingredients until mixture is mealy.
Add cheese and mix until well incorporated.
Stir the sauteed green onions into the buttermilk and then pour into the flour mixture.
Work the buttermilk and flour into a dough but do not over mix, there should be visible pieces of butter and margarine. That is what makes these biscuits flaky.
Turn the dough out onto a floured workspace. If you find it is too sticky work in some more flour.
Roll the dough out to 3/4 inch thick, fold and roll again. Repeat this process two to three times until you have a smooth dough. The dough will be speckled with butter and margarine. Cut into rounds, whichever size you prefer. About two inches in diameter is good.
Bake at 375 degrees for 20 minutes or until golden brown.
Time to prepare: 30 minutes.
