A few years ago a friend gave me this recipe for what she calls praline cookies. I'm not sure that you can consider these cookies in the traditional sense, as they require very little flour. To me they more resemble sugar glazed pecan clusters. These cookies are very simple to make and so good that they never seem to make it to the cookie jar. If you are like me you will find yourself standing in the middle of your kitchen eating these right off the baking sheet just as they come out of the oven.
Mix dry ingredients.
In a separate bowl, combine lightly beaten egg white and vanilla. Add this to dry ingredients. Mix well.
Add pecans and stir until pecans are well incorporated.
Drop a large spoonful of pecan mixture on a well greased baking sheet. Now the key to successfully baking these cookies is the well greased baking sheet. Because these are primarily sugar they are wont to stick.
Bake in a preheated 275 degree oven for 15 to 20 minutes.
Remove from oven and immediately remove from baking sheet with a spatula onto wax paper to cool.
Time to prepare: 30 minutes.
