Parslied New Potatoes
Add 1 inch of water to Dutch oven. Cover and heat to boiling over high heat. In the meantime, wash potatoes and remove peel around "equator" of potato, if desired. Add potatoes to boiling water in Dutch oven. Cover and return to boil; reduce heat. Cook covered 20 to 25 minutes or until tender; drain and return to Dutch oven.
Drizzle with melted butter; sprinkle with parsley, salt and freshly ground pepper. Stir gently to coat potatoes.
Time to prepare: 40 minutes.
