Parmesan Garlic Edamame


Start by steaming the edamame. Put the frozen edamame in a plastic zipper bag with 1 tablespoon of water. Seal the bag, leaving a small opening for the steam to escape. Place the bag of edamame in the microwave and heat on high for 2 minutes. After steaming, drain the liquid and set the edamame aside.

If you don’t have a microwave you can steam the edamame in a colander placed over a pot of boiling water.

In a small food processor puree the olive oil and garlic.

Heat a wok over medium high heat; add the edamame and garlic olive oil. Stir the edamame to coat with the oil and sauté for two minutes, stirring constantly.

Transfer the edamame to a serving bowl and toss with the breadcrumbs, Parmesan, oregano, onion powder, salt and pepper.

This is a great snack food and can serve 3-4 people.


Time to prepare: 15 minutes.
