Okra, Corn And Tomato Saute
The okra is starting to come on in my vegetable garden. The fresh, new pods are perfect for preparing in this dish of summer vegetables seasoned with bacon, salt and pepper.
First prepare the okra by trimming the ends and slicing the pods about 1/2-inch thick. Keeping the pieces chunky will help keep the gumminess of the okra in check when cooked.
Cook the bacon. Set aside the bacon and save the drippings.
Heat 2 tablespoons of bacon drippings in a large skillet.
Add the onions and sauté until translucent and tender.
Add the okra slices. In effect you are flash frying the okra to further reduce the gumminess. Sauté for 5 minutes, stirring constantly.
Add the remaining ingredients. Reduce the heat to low and cover the skillet. Simmer for 15 minutes.
Serve hot topped with crumbled bacon.
Time to prepare: 25 minutes.
