Michigan Blueberry Pie
We just received 700 blueberry shrubs at the Garden Home at Moss Mountain. Needless to say I'm looking for blueberry recipes. What better source than the growers who sent me the shrubs? Heidi from The Berry Family of Nurseries sent me her favorite recipe for Michigan Blueberry Pie.
Fill the pie shell with fresh blueberries.
In a small saucepan mix sugar, cornstarch, salt, Karo syrup and water. Bring to a boil and cook until clear.
Remove the mixture from heat and add jell-o and dissolve. Cool to room temperature. Pour over fruit. Enjoy! It is fantastic!
Heidi advises putting blueberries in snack size baggies to store in the freezer. You'll have just the right amount on hand to add to oatmeal, cereals, yogurt, smoothies, sprinkled over pancakes, waffles, or just as a portable snack.
