Macaroni And Cheese With Leeks
I try to take a healthy approach to the foods I eat, but there are days when I just need to indulge in some good old comfort food. This homemade macaroni and cheese dish is just that. Perhaps not very good for the heart, but definitely good for the soul.
Ingredients
- 6 oz. macaroni pasta, short cut
- 4 tbsp. butter
- 4 leeks, coarsley chopped
- 5 tbsp. flour
- 3 cups milk
- 8 oz. monterey jack cheese, grated
- 3 tbsp. breadcrumbs
- salt and pepper to taste
Instructions
Preheat oven to 400 degrees F.
Cook macaroni in salted boiling water until tender. This usually takes about 8 to 10 minutes but check cooking instructions on the package. After macaroni is done remove from heat and drain well.
Melt butter in a saucepan, add the chopped leeks and saute for about 4 minutes. Stir in flour and cook for another minute. Remove from heat.
Gradually add milk to the leeks and flour, combine well and return to heat. Bring to a boil, constantly stirring. Simmer for about 3 minutes to reduce liquid.
Remove from heat and mix in cooked macaroni and most of the cheese, season with salt and pepper to taste.
Pour this mixture into a baking dish and top with breadcrumbs and remaining cheese.
Bake 20 to 25 minutes, until golden brown. Serves 4.
