Lemon Pie With Pecan Shortbread Crust

Some people prefer chocolate, but I've always had a preference for fruit desserts and the tangy flavor of lemon is one of my favorites.



Start by making the crust. Combine the flour, pecans, sugar and salt in a food processor and pulse until everything is well blended.

Add the butter and vanilla. Pulse until the butter is incorporated. The mixture will be crumbly.

Add the egg and blend until the mixture is moist. The dough will still be a little crumbly.

Press the crust into the bottom and up the sides of a greased 9-inch pie plate.

Bake in a pre-heated 350 degree F oven for 10 minutes.

While the crust is baking, move on to your filling.

Just put all the filling ingredients in a bowl and stir. It will be a smooth, custard consistency.

Pour the filling into your prepared crust.

Return the pie to your pre-heated 350 degree F oven and bake for 30 to 35 minutes. The filling will be set when done.

Allow to cool and serve with a dollop of fresh whipped cream and a sprig of mint.


Time to prepare: 1 hour.

Serves 10.

    I am trying this recipe today, 4/7/12. Would like to see clearer directions. Hope I am guessing correctly what goes in the filling and what goes in the crust. Thanks
