Lemon Asparagus
About 3 years ago I planted asparagus crowns. This is the year that the beds will be established enough to harvest. The flavor of freshly picked asparagus is so delightful. It's best prepared with a minimum of seasoning so the flavor of the vegetable can come through.
Ingredients
- 3 bundles asparagus
- juice of 1 lemon
- lemon zest
- 1 stick butter, unsalted
- salt and pepper to taste
Instructions
Drop the spears in boiling water until just tender, about 3 minutes.
Squeeze lemon juice over spears and add butter.
Allow butter to melt.
Add lemon zest and salt and pepper to taste.
Garnish with lemon rinds. Serve immediately.
Notes
Time to prepare: 15 minutes.
