Irish Soda Bread

This is a great bread to prepare for dinner on a weeknight because it does not have to rise. The buttermilk and baking soda give the oomph needed for this bread to rise in the oven.

The bread gets a little stale by the second or third day but it's still good toasted. I especially like it with herb butter.



Combine all the dry ingredients.

Whisk together egg and buttermilk. Add all at once to the dry ingredients.

Stir in the melted butter.

Stir to combine.

Scoop the dough into a greased 9 x 5 inch loaf pan.

Bake in a preheated 425°F oven for 35 to 45 minutes. If the top begins to brown too much, cover with an aluminum foil tent. To test for doneness insert a toothpick in the center. If it comes out clean, the bread is ready.


Time to prepare: 1 hour.
