Spiced with orange zest, cinnamon and ginger this granola makes a healthy breakfast cereal or afternoon snack with a festive holiday flavor.
One of the best and worst aspects of the holiday season is all the wonderful food! It all tastes so good and sadly, I always eat too much! I can count on two things for the New Year; an increase in both my credit card bill and my waistline! To help with the waistline I try to keep some healthy snacks around to counter balance all the other goodies. This year I thought I'd try my hand at making some granola. This is a good recipe for the holidays because the granola is spiced with ginger and cinnamon. It is a tasty, heart smart, low calorie alternative to some of the other temptations that are usually around at this time of year.
- 2 cups oats
- 1/2 cup wheat germ
- 1/2 cup raisins
- 2 tbsp. butter, unsalted, melted
- 1/2 cup honey
- 2 tbsp. light molasses
- 2 tsp. vanilla
- 1/2 tsp. ginger, ground
- 1/4 tsp. cinnamon, ground
- 1/4 tsp. salt
In a medium sized bowl combine melted butter, honey, molasses, orange peel, vanilla, ginger, cinnamon and salt.
Mix the oats, raisins and wheat germ in a large bowl and then drizzle with the butter mixture. Stir until all the oats are evenly coated.
Spray a rimmed baking sheet with non-stick cooking spray. Spread the oats evenly on the cookie sheet and bake in a pre-heated 350 degree F oven for about 15 to 20 minutes, stirring every 10 minutes or so.
It is important to keep your eye on the granola while it bakes because it will go from golden brown to burned very quickly. And don't expect it to become crunchy in the oven. This will happen after you remove it and allow it to cool.
Stored in an airtight container, this granola will last for about 1 week.
