Herbed Beef Tenderloin
To begin trim the beef tenderloin and cut into 6 to 8 ounce steaks.
Next chop the herbs and mix them with the olive oil and pepper.
Pour this olive oil herb mixture over the beef and marinate for at least 2 hours.
While the meat is marinating, bring the beef stock or demiglace to a boil in a saucepan. Add the rosemary sprigs and red wine. Boil this until it is reduced by half. Remove the rosemary sprigs and discard. Set aside.
Prepare the grill, remove the beef from the marinade and grill to desired temperature.
Nap with the warm rosemary-infused stock or demiglace and serve immediately.
Time to prepare: 2 hours, 20 minutes.
