Fig And Strawberry Jelly
The 100 year old fig at the Garden Home Retreat produces so many fruits that there are enough for both myself and the birds to enjoy. At the peak of fig season I like to make a batch of fig preserves. With this recipe the figs are flavored with strawberry gelatin. You can substitute lemon or unflavored gelatin.
Ingredients
- 8 cups figs, chopped
- 6 cups sugar
- 3/4 cup water
- 2 3oz. packages strawberry gelatin
- 1/4 cup lemon juice
Instructions
Place the whole figs in a large pot.
Pour boiling water over the figs and let stand for ten minutes.
Drain the figs, remove stems and finely chop.
Return figs to the pot. Add 3/4 cup water, sugar, lemon juice and strawberry gelatin.
Bring the mixture to a boil. Boil for 5 minutes, stirring continuously.
Pour into hot, sterile glass jars. Screw on lids and process in a hot water bath for 10 to 15 minutes.
