Cucumber Yogurt Dip
Ingredients
- 1/2 small cucumber, peeled, finely grated
- 1/2 tsp. salt
- 1 tbsp. mint, finely chopped
- 8 oz. whole milk yogurt, drained
Instructions
Sprinkle the grated cucumber with the salt; set in a colander to drain for 30 minutes, then squeeze out the excess juices.
Add the drained cucumber and fresh mint to the yogurt and whisk to combine; cover and refrigerate until ready to serve.
