Cucumber Watermelon Salad

This crisp salad is a tasty treat on a hot summer day. Refreshing cucumber and sweet watermelon are lightly flavored with a little lemon juice and chopped basil.
Ingredients
- 2 cucumber
- 3 cups watermelon, cubed, seeded
- 3 tbsp. lemon juice
- 1/4 cup basil, chopped
- salt to taste
Instructions
Peel cucumbers and slice lengthwise in half. Scoop the seeds out of the center of the cucumbers. Cut the cucumbers into bite size pieces.
Lightly salt the cucumber and place in a colander for 30 minutes to draw out some of the moisture. Pat dry.
Drain any excess juice from the watermelon and combine with the cucumber.
Toss with lemon juice.
Add salt to taste.
Sprinkle with chopped basil and serve chilled.
Notes
Time to prepare: 40 minutes.
