Cucumber, Pepper And Onion Relish

This relish is a crisp, cool treat that makes a great addition to any meal. I especially like it with fresh, sliced tomatoes. Now, I prefer it a little on the tart side, but you can experiment with the vinegar, sugar and water ratios until it suits your taste.
Ingredients
- 1 large cucumber
- 1 banana pepper
- 1/2 a medium onion
- 1 1/2 cup white vinegar
- 1/2 cup water
- 1/2 cup sugar
- 1 tsp. black pepper
Instructions
Begin by peeling the cucumber and removing the seeds from the pepper. Then thinly slice the cucumber, pepper and onion. Put the cut vegetables into a clean mason jar. Any jar with a lid will do. The idea is to be able to store the relish in the refrigerator.
In a bowl mix vinegar, water, sugar and black pepper. Stir until sugar dissolves. Pour the liquid into the mason jar, over the sliced vegetables.
Cover with the lid and refrigerate for an hour before serving. Unless I'm having friends for dinner this recipe usually lasts me for two or three weeks.
