Chewy Nutty Fruity Granola Bars

Now I have to be honest about these granola bars. They aren't less expensive to make than it is to purchase a box of bars and they are loaded with butter and sugar, so they aren't particularly healthy. But they sure taste good and once you get the basics down they are easy to modify to suit your budget and your diet.

I make them in muffin tins lined with a cupcake papers. They're just the right size and the paper cups make them easy to store.

Toast the wheat germ, nuts and seeds in a skillet. Stir constantly to prevent burning. Combine this with the oats and dried fruit in a large mixing bowl.

Combine the brown sugar, honey, maple syrup, butter, vanilla, and cinnamon in a saucepan. Cook, stirring constantly, over a medium heat until butter and sugar has melted. Pour the melted butter mixture over the oats, nuts and fruit. Stir well until everything is well coated.

Scoop the granola mix into the paper lined muffin tins. Press with a spoon to pack down the mix.

Bake the granola in a pre-heated 300 degree F oven for 20 to 30 minutes.

Allow to cool completely before removing from the muffin tins.

These will keep for about one week in an airtight container.

Time to prepare: 40 minutes.

This recipe is vegetarian.
