Cabbage Cole Slaw

Cole slaw is a must have side for many of my favorite southern foods. Barbeque, fried catfish, po-boys all need a generous helping of cole slaw to make the meal right. I received this version from Rebecca Simms with the Menasha Hunting and Fishing Club, a little spot over on the Arkansas, Tennessee border. It's got sunflower seeds for a little extra crunch and celery seeds add a nice zip to the flavor.
Ingredients
- 1/2 cup red or sweet onion, sliced finely
- 1/2 cabbage, shredded
- 2 tsp. vinegar
- 2 carrots, grated
- 1/4 tsp. celery seed
- 1/2 cup mayonnaise
- salt and pepper to taste
- 2 tsp. sugar
- 1/2 cup sunflower seeds
Instructions
Combine the cabbage, onions, carrots and sunflower seeds in a serving bowl.
In a separate bowl mix together mayonnaise, sugar, vinegar, salt, pepper and celery seed.
Add the dressing to the cabbage and toss.
Notes
Time to prepare: 20 minutes.
Serves 4.

my wife and I also like about 1 Tbl.spoon pineapple juice and 1/4 cup cut up pineapple pcs. added to cole slaw.

Sounds good...cole slaw is also good with boiled baby shrimp in it when eating seafood...
