Blackberry Ice Cream
This ice cream is a delicious way to take advantage of all the fresh blackberries available to us right now and with an electric ice cream maker it is super simple to prepare.
The ingredients listed here are in quantities suited for a 1-quart capacity machine. If you have a larger ice cream maker I suggest you follow one of the berry ice cream recipes that is included in the owner's manual and substitute blackberries. Just be aware that blackberries are juicier than a lot of other berries, so you may have to use a little less than what the recipe calls for. The first time I made this recipe on was too heavy handed with the blackberries and the mixture turned out too fluid to properly set. I ended up putting it in the freezer and it still tasted good.
I use a combination of whipping cream and milk in this recipe because I like an ice cream with rich flavor and creamy texture. If you are on a restricted diet you can substitute 2 cups of milk for the cream and milk combination. Just be aware that the texture and taste will change quite a bit. In that same vein, you can use sweetener in place of the sugar. Eight packets of sweetener equals 1/3 cup of sugar, so you will need 16 packets to replace the 2/3 cup of sugar.
- 1 cup blackberries
- 1/2 cup milk
- 1 1/2 cup whipping cream
- 2/3 cup sugar
- 1 tablespoon vanilla
- 2 teaspoons lemon juice
- salt to taste
Puree the blackberries in a blender or food processor. Add the remaining ingredients to the blackberry puree and blend until smooth.
Pour the mixture into your electric ice cream maker and follow the instructions provided in your owner's manual.
