Baked Apples And Sweet Potatoes
If you are looking for a new twist on that old holiday favorite, candied sweet potatoes, this recipe might be just what the chef ordered. Tart green apples are a perfect complement to the sugary taste of sweet potatoes. And with just a touch of honey added, this dish is not as sweet as some of the more traditional preparations.
- 3 cups granny smith apples, sliced, peeled
- 1 tsp. lemon juice
- 4 small sweet potatoes, peeled, sliced
- 1/4 cup honey
- 1 tbsp. butter, melted
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup bread crumbs
- 2 tsp. olive oil
- 1/4 tsp. nutmeg, ground
- some cooking spray
In a large bowl combine apples and lemon juice. Add sweet potatoes, honey, melted butter, salt and pepper. Mix well.
Coat a 13 x 9 baking dish with cooking spray. Spoon apples and sweet potatoes into dish. Bake in a pre-heated 400 degree F oven for 40 minutes. After 25 minutes stir for even cooking.
In a small bowl mix bread crumbs, olive oil and nutmeg. After the sweet potatoes and apples have baked for 40 minutes remove from oven and sprinkle with bread crumb topping. Return to oven and bake for an addition 15 minutes or until topping is golden brown.
Remove sweet potatoes and apples from oven and allow to stand for 10 minutes so that the juice will thicken.
Time to prepare: 2 hours.
